Here's a delicious and easy recipe for roasted peppers with garlic and herbs:

Ingredients:

  • 4 bell peppers (any colors, cut into strips or quarters)
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano (or 1 tbsp fresh oregano)
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • Salt and pepper, to taste
  • Optional: A pinch of red pepper flakes for heat
  • Fresh basil or parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 425°F (220°C).
  2. Prepare the Peppers:

    • Wash and cut the bell peppers into strips or quarters, removing the seeds and stems.
  3. Season the Peppers:

    • Place the cut peppers in a large bowl. Add the minced garlic, olive oil, dried oregano, dried thyme, salt, and pepper. Toss everything together until the peppers are evenly coated.
  4. Roast the Peppers:

    • Spread the seasoned peppers in a single layer on a baking sheet. If you prefer, you can line the baking sheet with parchment paper for easier cleanup.
